I don't know, I like Wilco but I could see how they could be classified as dad rock.
If by "dad rock" you mean "containing lyrics of a certain quality typically requiring a level of life experience and understanding to appreciate the full depth of wisdom, humor, intelligence, pain, honesty, wit, colorfulness and a mastery of prose more often found among the poetry of classic writers and much less typically found in rock and roll music", then yes, Wilco is definitely dad rock. From this perspective, I can totally understand why many younger people don't "get" Wilco.
That isn't even mentioning how good the musicians in the band are. Tweedy's voice is unique, Nels Kline's guitarwork is frenetic and tasteful. The rest of the band are great, but I'm tired of typing already. But the best part is they all work together as a singular unit.
I would recommend Sky Blue Sky or A Ghost is Born over Yankee Hotel Foxtrot, as a starting point.
