I like to consider myself a somewhat decent human being so out of respect for our vegetarian friends, I won't post it here but all you steak lovers out there should do a youtube search for "eat steak" and watch the first result.

Out of my love for meat, I will not watch this video! I can eat meat as long as I don't think about where it came from.

yes, that is the one - it's pretty good - offers a lot of insight into her life and the difficulties she has experienced.
Fresh broiled cod filet, steamed carrots, brown rice and zucchini. Third night in a row I'm eating cod fish. Taking the last of it to my buddies tomorrow and he's gonna cook it up cajun style for Mardi Gras. I think we will be the first people to ever cook cajun cod fish.
Shrimp and sausage gumbo in a lobster stock, cajun meatloaf, ratatouille and bread pudding for desert. All home made.
You're just a regular coonass this week! I like it.
Now I wanna make crawfish chowder in a bread bowl....but the stupid cold weather has made crawfish too expensive this year. I mean, come on.....you can get it in a ditch.

I am currently scouring the internet for healthyhealthyhealthy TexMex recipes for dinner tonight. I'm making the standard beef tacos, refried beans and cheese quesadillas for my wee ones, but I want a meatless, super healthy alternative for Mama. Any suggestions?

Are you making your own beans from scratch? I make mine and dont turn them into refried. If you use that, replace the cheese with sour cream and add avacodo, tomato, raw onion and some delicious salsa it would be meatless and tasty. ;D

just reading this thread is making my stomach growl. I'm starving now!
I was going to make chkn and broccoli alfredo but now I'm leaning more towards Cowboy Cornbread.
It's my boyfriend mom's recipe but i tweaked it a little. Basically it's browned hamburger meat, a jar of medium salsa, a bag of shredded cheese, a can of corn, and black beans all mixed up together and I pour cornbread batter over the top and bake it in the oven. It's super easy and really freakin good.
We are having crockpot chicken (chicken, white wine and a packet of dry italian dressing mix - left on low all day), steamed brocolli, grean beans and brown rice
it looks like we have the first decent weather on a weekend in several weeks here in the ATL. I'm thinking something on the grill. maybe tomorrow some shrimp or steak kebabs. Tonight is anybody's guess. Gotta be meatless since its Friday.
Meg, your crockpot chicken sounds really yummy. I looove my crockpot - haven't tried that combo though.

the chicken is really easy
4-5 boneless, skinless chicken breasts 1 cup white wine 1 packet Good Seasons Italian Dressing mix
throw it in the crock pot on low 6-8 hours
serve over rice

would love the cream cheese one too...
one of my favorite things to do is take a Boston Butt pork roast, put it in the crockpot with BBQ sauce of your choice, and cook on low..just about 1/3 of sauce at first, then drain and add more sauce later as it cooks...it pulls apart nicely.
If you like, to save time, you can place the meat in the oven for an hour or two on 325 and chop it up before adding to the crockpot with sauce.
This is good for a large gathering...just have buns and a couple of sides and pickles, of course!
That sounds like a good way to do the Boston Butt - will have to try that - Boz normally smokes one - but that can be a PITA at times - the crock pot method sounds simple and no fuss
Here's one for Crock Pot stuffed shells
Ingredients: 18 Jumbo Pasta Shells 1 lb. Ground Beef 1 Chopped Onion 1 Clove Garlic-minced 2 c. Shredded Mozzarella 1/2 c. Seasoned Bread Crumbs 1 T. Parsley (I assume that was dried Parsley since I never use fresh) 1 Beaten Egg 2 16 oz. Jars of Marinara Sauce 1/2 c. Grated Parmesan
Instructions: Cook pasta according to package. Drain and rinse in cold water. Brown beef, onion and garlic. Drain. Add cheese, bread crumbs, parsley and egg to meat mixture. Mix together. Stuff carefully. Layer in crock: 1 jar of sauce, shells, second jar of sauce.
Cook on Low 5-6 hours.
And the cream cheese chicken
Ingredients 3 lbs chicken pieces (I use thighs because they are cheap) 1/3 C white wine (or a little more) 1 (2/3 ounce) package Italian salad dressing mix (see note) olive oil 2 tablespoons olive oil (divided) 1 small onion, chopped 1 garlic clove, chopped 1 (10 1/2 ounce) can cream of chicken soup (you can use cream of mushroom or cream of celery) 8 ounces cream cheese (I used fat free) 1/2 cup chicken broth
Directions 1. Pour wine into crock pot. Brush chicken with olive oil. Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. 2. Cook on low for 4-6 hours. 3. Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth. 4. Add this mixture to crock pot and cook on low for an additional hour.
I serve it with either brown rice or egg noodles and a green salad or green veggie
