Although they have yet to announce the Cafe acts, it seems we've already uncovered a significant portion of them. I figured we should try to compile some kind of a list, and here's what I have so far (I will try to keep this post updated):
Phonograph Amy LaVere Mike Farris Colour Revolt Royal Bangs The Everybodyfields Matt Hartke The Lasting Nikhil Korula Band Lauren D’Aria Person L Dead Confederate Lord T and Eloise Jeff Workman
Anyone I forgot? Anyone you think won't be a cafe act? Other comments?
Edits: Datarock removed - they are more likely to play a tent. Jeff Workman added - thanks to GeneralStore.

In part because they have already announced that they are playing Bonnaroo, and have also been listed on Pollstar for Bonnaroo, but (like many other cafe acts) they have not been part of an artist addition.
And also in part because I don't think they are "big" enough to play a tent.

Datarock will definitely be in a tent (i.e. This, That, or The Other)
Word. I thought they seemed a little too big for the Troo Music Lounge or the Blue Room Cafe, but we've known about them for more than a month now, I don't understand why they weren't part of the last artist addition. Nonetheless, I'll take them off the list.
i messaged Ben Sollee the Singer-songwriter/celloist in the Sparrow Quartet and it looks like he may be doing a set at 'roo. If that happens i would think he'd be a Cafe act.

Nice find on Jeff Workman, I didn't see him. I saw DJ Honda, but left him off the list because I feel like he will be in the Arcade Tent or the Silent Disco.
Why do you think Dead Confederate will be a cafe act?
Usually They have several big names that should almost play a tent but for some reason or another don't. The Whigs (last year) and Bobby Bare Jr. ('06) come to mind. I think Dead Confederate take that position this year.
