Last year, during the Umphrey's McGee/Disco Biscuits late night show, they performed 2 covers, Pink Floyd's 'Brain Damage / Eclipse', and The Beatles' 'Baby You're a Rich Man' - both were incredible.
A few weeks ago in Raleigh, Galactic put on a tremendous show. Their first set ended with an outstanding version of Led Zeppelin's 'Kashmir'. During their second set, Papa Mali (who opened) joined the band for a blistering cover of Harry Nilsson's 'Jump Into The Fire' (which I only knew as the song playing in Goodfellas when the helicopters are chasing Henry Hill).

man, i wish they were on the line up. they do fantastic covers. ive seen em do Magic Carpet Ride and Get Down TOnight(not sure if thats the name of the song) and have a recording of them covering the SUper Mario Brothers theme. I also expect a cover or two outta Keller as he always seems to throw one or two in during shows and on albums. My favorite cover he does is Bird Song (call me sacriligeous but better than the Dead's version. cant resist the percussion-like guitar playing).
I am surprised that no one has mentioned any of SCI's covers... they do some awesome covers as well! Some of my favs they do are Talking Heads - This Must Be The Place, Bob Marley - Bend Down Low and Could You Be Loved, Led Zep - Ramble On, Grateful Dead - I Know You Rider, Keller - Best Feeling... I just know they will bust out a good one for Roo!!
NMAS did a great version of Boomer's Story at b'roo 04. They also do a good version of "Bo Diddley" and "La Grange" by ZZ Top. Mule always does great covers....well maybe not always ( I'm a Ram->Love me do is so annoying).... RITFW or John the Revelator, hell I liked it when they did Ramblin Gamblin Man by Bob Seger.
Last year Oysterhead did a rock-steady cover of 'Jailhouse Rock' (with Les growling the 'lets rockkk, everybody lets rockkk' chorus). I'd love to hear The Police unveil a cover on Elvis Costello's 'Watching The Detectives', or how 'bout The Clash's 'Police On My Back'.

I was a huge fan of Trey and Matisyahu's No Woman, No Cry in 05, and Phil in 06 rocking into Watchtower from Fire on the Mountain and then the refreshing Gimme Shelter post-downpour.
However, i would love to see a rendition of Can't You Hear Me Knocking, cause it just rocks so hard.
