Thanks in advance. My teacher gave us like 3 weeks to find and interview a banquet manager. Time is not something I have much of this late in the semester and banquet managers get REALLY busy once spring comes.

Where can one try cow tongue &/or ox oil in the US? Like, at kind of cuisine is that?
They're both used all over the world, so many ethnic restaurants would have it. But it's not going to be standard on any one cusine's restaurant menus. A lot of countries use the entire animal in their cuisine, but I've had ox tail in Italy, China, Russia and Mexico. I know it's also big in Filipino and Caribbean cuisine. So I'd try those restaurants. Cow tongue I don't see very often except at a couple hole in the wall El Salvadorean restaurants here, Mexican taco trucks and a couple of places close to the border between San Diego and Tijuana. But if you live near a real taco shop they should either be able to get tacos de lengua or tell you where you could find it.
I see you're in Columbus which actually has some of the best taco trucks in the Midwest. You can probably get beef tongue tacos at some or all of these - Columbus Taco Trucks
Eyeballs are good. Brains are meh. Ox tail is good. Tongue? I have not had and I don't know why the idea bothers me.
My Mom says it's great and I was all down for trying it until... Last weekend my friend said he went to the local butcher and asked to buy cow tongue. They offered him like three feet of it but he didn't want that vein and just wanted one pound. So he said it was great. The only down side was that you had to "Scrub it really hard and then peel the outer layer off." He said it was tough, "Like the bottom of a foot."

Tongue is good. Im open to trying things but liver and kidneys. IMO a bodies natural filters arnt the kind of things that I would be wanting to consume.

Also, any respectable Russian specialty store should have tongue for sale, if you can find one.
True, and maybe ox tail as well. Around me, there is also a Korean butcher who has ox tail and a Mexican grocery that has tongue. I don't know about other places in the US but if you want to make it yourself, check with your local grocery store. My Safeway and Whole Foods both carry tongue and tail from time to time.
I think you would like to meet a babushka. Hang out around the deli counter and say "krasavitsa" to all the ladies.
