I did Burritos for Okeechobee this year and it was a lifesaver, so easy just to get them out and throw them in the pan with the tin foil still around them until they got hot. No mess, easy clean up.
I had an amazing chicken bacon ranch quesadilla from a vendor in 2022, and I knew I wanted more of that, but I also knew I'd be flat broke if I bought it every day, so I came up with my own:
Ingredients: Large tortilla (for holding a lot of stuff) Shredded Mexican blend cheese Ranch dressing (duh) Bacon (any bacon will work) Pre cooked, pre-shredded chicken (you can get this at Aldi or Trader Joe's, or maybe Publix if you're rich) Butter, or something else to grease the pan
How to cook: 1. Cook the bacon. Put aside. 2. Slather inside of tortilla with ranch. Well, it's not really the inside yet, since you haven't put anything in it. Once the you put ranch on it, that side becomes the inside. 3. Add cheese, bacon, chicken. 4. Fold over. If you put in too much stuff & it won't fold, get another tortilla, ranch it up & put it on top. Now you have a big quesadilla. 5. Add butter to the pan. You can leave the bacon grease, that's okay. But add butter. 6. Cook that shit.

That sounds good, brat, thanks for the suggestion. That got me thinking about an old Roo vendor staple that's gone now, Pesto Mozzadillas. They're delicious and filling, and were reasonably priced. Basically, it's a quesadilla made with: A big flour tortilla (duh) toasted on an oiled griddle, mozzarella cheese, basil pesto (yum!), and sliced Roma tomatoes. They're simple but shockingly good, even though they will drip green liquid all over you, and literally the only way I eat uncooked tomatoes. I've made them at home many times but they're plenty easy enough to make at a campsite.
If car and tent camping then I'm going with things easy to eat cold and dont need heated - pasta salad, fruit salad, fruit, sandwiches, wraps, chips/dip/crackers/snack foods. If RV then Im using a large portable skillet, outside (to not heat up inside the RV), and have made the usual suspects - burgers, hot dogs, macaroni and cheese, pre cooked bbq pulled pork. Bacon and eggs and french toast for breakfast.
