Yeah, Pittsburgh Rare is how I have heard it referred to. Basically, the first option is everything past rare since I didn't think as many people would go for it.

Unless the establishment is grinding the beef into burger on the spot, with fresh beef brought in that day, it's very risky eating anything under medium well burger. As a former cook, I use to get many American tourists come in and ask for a burger cooked rare. I would throw on my chef whites, go to the dinning room and kindly explain why their request could not be met, and likely would not be met anywhere in Canada. Our rules on such things are a little more strict then our southern neighbours it seems.
That said, I've had a medium rare burger in San Fran once, and it was utterly divine. So I do understand the appeal.
Sorry. Same principle applies for Steaks though. For example, I would never order a steak medium-rare or rare at a Charlie Browns (wouldn't really order a steak there regardless, but that is besides the point).

Grinding hamburger mixes up the meat to where bacteria can be more prevalent through the entirety of it while steak is its original form, so you really only have to worry about it being on the outside. Like Boner, I like medium rare steaks, but I am not doing that with hamburger.

Med rare.
I worked as a server at a steakhouse for years. I would cringe when someone ordered their steak well done. Medium well is the end of the line if you actually want to taste the steak. Ohhhhh, and when they would order the, "Fill-et mig-non, well done," yeah, they don't deserve to eat steak

I would worry more about the egg than the steak, but that's because my uncle got food poisoning from undercooked eggs once, and let's just say that it was not pleasant to see or hear. Also, I would assume that anywhere offering steak tartar would be grinding the steak fresh and such.

Rare all day. My bothers girlfriend eats well done steaks and we usually have to throw on the grill a couple of times because we can't seem to bring ourselves to burn steak. On the other hand she eats limp bacon which blows my mind.

Anyone who doesn't order their steak and burgers medium-rare is completely missing the point.
i think the only reason i do medium is because i don't trust some of these places to cook it enough, but gotta have a red juicy center!
Haha I hear you but do me one favor, give the medium-rare burger another chance. Forget the steak for a minute... The medium-rare burger will change your entire burger experience.
I used to get all my burgers medium and medium-well until my friend convinced me I was blowing it. He was pretty passionate about it, so I switched things up. Needless to say, I've never turned back.
