Way too many shows to choose from. Gonna go with ones that have stood the test of time in my mind
1. Robert Randolph & Family Band w/Luther Dickinson - 2004 Late Night 2. Widespread Panic w/Bob Weir, Herbie Hancock, Dickinson Brothers, Randolph, and Bruce Hampton - 2005 2nd show 3. Galactic 2005 (Mardi Gras Bash) or Galactic 2007 (w/ Hip Hop Artists)
Honarable Mention: Stevie Wonder, Trombone Shorty, Jay Z, Black Keys (2010), Rodrigo y Gabriela, Beastie Boys (2009), Robert Randolph, Derek Trucks (2008), North Mississippi Allstars (2004), The Word (2005)
Yeah, you said name 3 and I named 15. Deal with it ;D

Manu chao Buckethead and bernie Jay-z
All 3 shows I was walking away from until someone convinced me it was going to be an amazing show. If you didn't see Manu chao at roo, you missed the greatest show ever held at the which stage... And as a huge flips fan that still has laser pointers that is saying a lot
Radiohead's surprise set 2011 Flaming Lips' surprise set 2011 Dave Matthews Band surprise set 2011
You going this year - cuz I'm gonna have to find you to get whatever you're smoking.
He left off the best surprise set I heard about the other day from my source- The Beatles will be playing this year...all 4 of them. You read that right.

Last year was my first but I'll go with:
Jay-Z The Flips John Prine
I didn't think back to hard but I was really excited to see the Lips and Prine, they didn't disappoint. I wasn't expecting much out of Jay-Z and was blown away.
