I ADORE quinoa. I don't make it nearly as much as I should. It is SO good for you and is incredibly versatile.
Last night, I made the quickest dinner I've ever made. It was delicious and super healthy. I'm looking forward to eating the leftovers for lunch today I'll bet it is even tasty cold.
-I boiled quinoa in low sodium chicken broth. -While that simmered, I sautéed a whole bag of frozen fire roasted peppers and onions from Trader Joe's in a smidgen of olive oil and garlic. -When those got soft, I poured a crap-ton of sriracha (the hot sauce nectar of the gods) into the veggies, along with pepper, garlic powder and crushed red pepper. -Then, I dumped the prepared quinoa into a big bowl, followed by the veggies and I spooned in heaping spoonfuls of Red Pepper Spread with Eggplant and Garlic (compliments of Trader Joe's, again) and mixed that all in.
Deliciouso. It was incredibly filling and only set me back 290 calories per serving. Which left more calories for another glass of vino last night
Sriracha aaaaand crushed red pepper? I am coming over for leftovers! I need something spicy for dinner tonight! I almost bought a hot pepper mix of seeds and a starter kit to grow some hot peppers this summer when I was at Home Depot yesterday. Hmm pepppppeerrrrsssss

I TOTALLY live for spicy food. I went out for Thai last night and ordered my basil chicken "super super Thai spicy with extra peppers on the side" per usual. Ahhh. Bliss.

1 tablespoon olive oil 1 small onion, chopped 3 cloves garlic, crushed 1 tablespoon of Sriracha Sauce 1 fresh red chile pepper, finely chopped 1/4 cup dark brown sugar 1 teaspoon fennel seed, crushed 1 cup ketchup 2 tablespoons soy sauce salt and pepper to taste Directions:
Heat the oil in a saucepan over medium heat. Stir in the onion, garlic, red chile pepper, brown sugar, and fennel seeds, and cook until onion is tender and sugar has melted. Mix in ketchup and soy sauce. Bring to a boil. Reduce heat to low, add in Sriracha , simmer 10 minutes.
This is a pretty basic one. I usually bump up the Sriracha and dummy down the ketchup.
Funny enough I was thinking of making some for dinner with Jalapeno Mac n' Cheese.
Chock full of amazing cocksaucesriracha recipes. Heaven.
I understand there's a rooster on the bottle and all, but I don't think I would refer to it as "cocksauce". People might get the wrong idea.

Totally fair.
I understand that its a questionable colloquialism, but I hear it called Rooster Sauce and CockSauce far more often than I hear it called by its actual name. Even if you google it, "Sriracha cocksauce" is the second predictive search result. But, I'll keep it formal on the boards, because, yeah, it certainly can elicit the wrong idea.

4 Cheese Ravioli w/ super basic tomato Sauce -
3 vine ripe tomatoes chopped up, an ass ton of minced garlic (in metric units), big pinch of dried thyme, about 1 cup of chopped fresh basil, kosher salt, simmered in about 1/2 cup+ extra virgin olive oil for 30-45 minutes.
And if anyone in the Nashville area gets a craving for a beer, I have half a keg left....

That's what I said too! I thought for SURE that I drank half of that keg all by myself.... Clearly Dave, we were running our mouths too much, and not drinking enough.
